Ingredients
5 very ripe bananas
1/4 cup milk (dairy, rice, soy, almond etc – I use oat milk)
4 tablespoon coconut oil, ghee or grass fed butter
2 tablespoons rice malt/pure maple syrup
1 teaspoon pure vanilla extract
1 1/2 cups buckwheat flour (can also use coconut, spelt, normal, quinoa etc)
2 tablespoon psyllium husk (optional)
1 teaspoon baking power
1 teaspoon baking soda
Pinch of seaor Himalayan salt
1 cup chopped nuts (I love pecans and almonds but go nuts )
*Added extras: Adding some cacao nibs, dark chocolate or coconut is a great additional to mix it up.
Method
Preheat oven to 180 degrees Celsius. Line a 8 by 8 baking pan with baking paper and a bit of coconut oil/ghee if you need it to help stick.
Mash banana and mix in milk, coconut oil, syrup and vanilla. It may help to use a hand held mixture or blend ingredients but I love biting into a cheeky blob of banana so whatever suits you!
Sift in flour, baking power,baking soda and salt then mix in with psyllium husk. Fold in nuts and decorate with a few extra on top if you like then pop in the oven for around 45min or until a skewer comes out clean. Enjoy the delicious banana smell that will waft through your kitchen and possibly beyond then take out of the oven when ready. Allow to cool slightly before tucking into a piece, or two!
